Travel with your fork and your attitude checklist to lands that boast longevity and vitality: the "Blue Zones" of Sardinia, Okinawa, Ikaria, Nicoya and Loma Linda (California). Each class will feature recipes and nutrition information. In addition, relevant information learned from National Geographic, e.g. spirituality and community, will be included. The last class will feature a potluck; class members may bring a dish of choice from the featured recipes to share.

Instructor Bio:

Penelope Ferguson, MS RD (Registered Dietitian), is a functional nutritionist who teaches others that better health can be achieved through improved diet and lifestyle changes. Penelope graduated from James Madison University in dietetics and earned a master's degree from Rutgers University. She has an extensive clinical nutrition background in hospital and long term care facilities.
